Creamy Parmesan Pasta Salad
A cool pasta salad with a creamy Parmesan dressing thats great for potlucks, picnics, or as a side dish for any meal.
Ingredients:
- 250g pasta penne or fusilli
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced black olives
- 1/2 cup diced cucumber
- 1/4 cup chopped fresh basil leaves
- 1/4 cup grated Parmesan cheese
- 1/3 cup mayonnaise
- 2 tablespoons sour cream
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions:
Follow the directions on the package to cook the pasta
Run cold water over the drain and rinse
Put cooked pasta, cherry tomatoes, black olives, cucumber, and basil leaves in a large bowl
Put mayonnaise, sour cream, lemon juice, garlic, salt, and pepper in a small bowl and mix them together with a whisk
Add the dressing to the pasta salad and mix it all together until its well covered
Put it in the fridge for at least 30 minutes before you serve it so the flavors can mix
Serve cold, and if you want, top with more grated Parmesan cheese
