Mexican-Style Air Fryer Stuffed Chicken Breasts

These air fryer stuffed chicken breasts in a Mexican style are tasty and simple to make, making them perfect for a quick dinner during the week. Every bite is extra tasty because the cheesy, tomato, and taco-seasoned filling goes well together.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup sliced black olives
  • 2 teaspoons taco seasoning
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Cooking spray

Instructions:

Shred the cheddar cheese and put it in a bowl

Add the diced tomatoes and red onion, chopped cilantro, sliced black olives, taco seasoning, olive oil, salt, and pepper

To make the stuffing mixture, mix it well

Lay each chicken breast out flat, and make a pocket in the side of each one

Be careful not to cut all the way through

Fill each chicken breast with the Mexican stuffing mixture, making sure that it is spread out evenly among the four breasts

Get your air fryer ready by heating it up to 375F 190C

Spray cooking spray lightly on the air fryer basket to keep food from sticking

In the air fryer basket, put the stuffed chicken breasts

Make sure they dont touch each other

In an air fryer set to 375F 190C, cook the chicken for 20 to 25 minutes, or until it reaches 165F 74C inside and is golden and crispy on the outside

The Mexican-style stuffed chicken breasts are ready to be served

Take them out of the air fryer and let them rest for a few minutes

If you want, you can serve it hot with extra cilantro and sliced olives on top
