Tapado - Honduran Tropical Seafood Soup
Tapado is a traditional Honduran seafood soup bursting with tropical flavors. This hearty dish combines a variety of seafood with creamy coconut milk and a medley of vegetables for a truly satisfying meal.
Ingredients:
- 2 lbs mixed seafood such as shrimp, fish fillets, squid, and clams
- 2 cups coconut milk
- 2 cups fish or seafood broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup diced tomatoes
- 1 cup diced green plantains
- 1 cup diced yuca cassava
- 1 cup diced chayote squash
- 1 cup diced sweet potato
- 2 tablespoons chopped cilantro
- 2 tablespoons lime juice
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions:
In a large pot, heat vegetable oil over medium heat
Add onion, garlic, and bell peppers
Saut until softened
Add diced tomatoes, plantains, yuca, chayote squash, and sweet potato
Cook for 5 minutes
Pour in coconut milk and fish or seafood broth
Bring to a simmer
Add mixed seafood to the pot
Cook until seafood is opaque and cooked through, about 5-7 minutes
Stir in chopped cilantro and lime juice
Season with salt and pepper to taste
Serve hot, garnished with extra cilantro and lime wedges if desired
