Creamy Broccoli and Chicken Quinoa Casserole

Enjoy a delightful and nutritious creamy broccoli and chicken quinoa casserole. This dish combines the goodness of quinoa, tender chicken, and nutritious broccoli in a creamy, cheesy sauce. Its a comforting and filling meal that the whole family will love.

Ingredients:

  • 1 cup quinoa, rinsed and drained
  • 2 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1/2 cup milk
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions:

Turn on your oven and heat it up to 375F 190C

Put quinoa and chicken broth in a large saucepan and mix them together

Once it starts to boil, lower the heat, cover, and let it cook for about 15 minutes, or until the quinoa is done and the liquid is absorbed

Put the cooked quinoa, chicken shreds, broccoli florets, cheddar cheese, and Parmesan cheese in a large bowl

Combine well

Put the milk, minced garlic, dried thyme, salt, and pepper in a different saucepan and heat them over medium-low heat

Lower the heat and let it cook for a few minutes, until it gets a little thicker

Put the creamy sauce on top of the quinoa mixture and mix everything together well

Spread the mixture out evenly in a 9x13-inch baking dish that has been greased

After the oven is hot, bake the casserole for 25 to 30 minutes, or until the top is golden brown and hot

Add fresh parsley on top and serve hot
