Kale and Herb Stuffed Meatballs

A tasty and wholesome take on classic meatballs are these Paleo kale and herb stuffed meatballs. They are a flavorful addition to your Paleo meal plan, full of kale and fresh herbs.

Ingredients:

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1/2 cup finely chopped kale
  • 1/4 cup fresh parsley, minced
  • 1/4 cup fresh basil, minced
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried oregano
  • 1/4 tsp dried thyme
  • 1/4 cup almond flour
  • 1 egg
  • 2 tbsp olive oil

Instructions:

In a large mixing bowl, combine the ground beef and ground pork

Add the finely chopped kale, minced parsley, minced basil, minced garlic, salt, black pepper, dried oregano, dried thyme, almond flour, and the egg to the bowl

Mix well to combine all ingredients thoroughly

Take a small portion of the meat mixture and flatten it in the palm of your hand

Place a small amount of the stuffing mixture made by mixing chopped kale, minced parsley, minced basil, minced garlic, salt, and black pepper in the center of the meat patty

Carefully shape the meat mixture around the stuffing to form a meatball, ensuring the stuffing is completely enclosed

Repeat this process with the remaining meat mixture and stuffing

Heat olive oil in a skillet over medium-high heat

Place the stuffed meatballs in the skillet and cook for about 3-4 minutes on each side, or until they are cooked through and browned on the outside
