Potato Sausage Hash with Mustard Mayo Dressing

A hearty and flavorful dish featuring diced potatoes, vegan sausage crumbles, and colorful vegetables, topped with a tangy mustard mayo dressing.

Ingredients:

  • 4 medium potatoes, diced
  • 1 cup vegan sausage crumbles
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/4 cup vegan mayonnaise
  • 2 tablespoons whole grain mustard
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped chives

Instructions:

Warm up the olive oil in a big pan over medium-low heat

It will take about 10 minutes of cooking after adding the diced potatoes until they start to turn brown

Dice the onion and bell pepper and add the crumbled vegan sausage to the pan

Keep cooking, stirring every now and then, for about 8 to 10 minutes, or until the vegetables are soft and the sausage is hot all the way through

Mix vegan mayonnaise, whole grain mustard, and lemon juice in a small bowl with a whisk

Add salt and pepper to taste to the potato sausage hash

Add the mustard mayo dressing to the hash and then top it with chopped parsley and chives

Enjoy while hot
