Twisted Blackberry Cobbler Tart
Ingredients:
- 1 sheet of store-bought puff pastry
- 2 cups fresh blackberries
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- 1 egg, beaten for egg wash
- Powdered sugar, for dusting optional
Instructions:
Preheat your oven to 375F 190C
Line a baking sheet with parchment paper
In a bowl, gently mix blackberries, granulated sugar, cornstarch, lemon juice, and vanilla extract until well combined
Roll out the puff pastry sheet on a lightly floured surface to a rectangle about 1/8 inch thick
Transfer the pastry to the prepared baking sheet
Spoon the blackberry mixture onto the center of the pastry, leaving about 1 inch border around the edges
Fold the edges of the pastry over the blackberry filling, creating a rustic tart shape
Brush the edges of the pastry with beaten egg for a golden finish
Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the filling is bubbling
Remove from the oven and let it cool slightly before serving
Dust with powdered sugar if desired
Slice and enjoy
