Roasted Peach Ice Cream Sandwiches

Indulge in the delightful combination of caramelized roasted peaches and creamy vanilla ice cream sandwiched between chocolate chip cookies.

Ingredients:

• 6 ripe peaches, halved and pitted
• 1/4 cup brown sugar
• 1 tablespoon vanilla extract
• 1 quart vanilla ice cream
• 12 chocolate chip cookies

Instructions:

Get the oven ready by heating it up to 400F 200C

Put the cut side of the peach halves on a baking sheet

Put brown sugar on top of the peaches and drizzle vanilla extract over them

After the oven is hot, roast the peaches for 20 to 25 minutes, or until they are soft and caramelized

Take out of the oven and let cool all the way down

Put vanilla ice cream on half of the cookies after they have cooled down

Put a roasted peach half on top of each and then add another cookie

Gently press down on the cookies to make sandwiches

You can serve them right away or wrap each one in plastic wrap and freeze them until youre ready to serve them
