Smoked Cowboy Beans
Savor the deep, smokey flavor of slow-cooked, rich cowboy beans in a Dutch oven. Ideal for any outdoor event or regular dinner.
Ingredients:
- 1 lb dried pinto beans, soaked overnight
- 1 lb smoked sausage, sliced
- 1 onion, finely chopped
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1/2 cup barbecue sauce
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 2 tablespoons mustard
- 1 tablespoon Worcestershire sauce
- 1 teaspoon chili powder
- 1/2 teaspoon black pepper
- 4 cups chicken broth
- Salt to taste
Instructions:
Preheat the smoker to 250F 120C
In a Dutch oven, combine soaked beans, smoked sausage, onion, bell pepper, and garlic
In a separate bowl, mix barbecue sauce, ketchup, brown sugar, mustard, Worcestershire sauce, chili powder, and black pepper
Pour the sauce mixture over the beans and stir well
Add chicken broth to the Dutch oven and stir again
Place the Dutch oven in the smoker and smoke for 4-5 hours, or until beans are tender, stirring occasionally
Adjust salt to taste before serving
