Chocolate Peanut Butter Macarons
Ingredients:
- 2/3 cup almond flour
- 1 cup powdered sugar
- 2 tablespoons unsweetened cocoa powder
- 2 large egg whites, room temperature
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup creamy peanut butter
- 3 tablespoons unsalted butter, softened
- 1/2 cup powdered sugar for filling
- 2 tablespoons cocoa powder for filling
- 1-2 tablespoons milk for filling
- Pinch of salt
- Chocolate ganache optional
- Crushed peanuts optional
- Cocoa powder for dusting optional
Instructions:
Preheat your oven to 300F 150C
Line a baking sheet with parchment paper
In a food processor, combine almond flour, powdered sugar, and cocoa powder
Pulse until well combined and fine in texture
Sift the almond mixture into a large bowl to remove any lumps
Set aside
In a separate bowl, beat the egg whites until they are foamy
Gradually add granulated sugar while continuing to beat
Beat until stiff peaks form
Fold the almond mixture into the egg white mixture in three batches, being gentle to keep the batter airy
Add vanilla extract and a pinch of salt while folding
Transfer the batter into a piping bag with a round tip
Pipe small rounds onto the prepared baking sheet, spacing them about an inch apart
Tap the baking sheet on the counter to release any air bubbles and let the macarons sit for 20-30 minutes, or until they develop a skin on the surface
Bake in the preheated oven for 15-18 minutes, or until the macarons have formed feet and are set
Let them cool completely on the baking sheet
In a mixing bowl, combine creamy peanut butter, softened butter, powdered sugar, and cocoa powder for the filling
Add milk as needed to achieve a smooth, spreadable consistency
Pair up the macaron shells based on size and spread a generous amount of the peanut butter filling on one shell
Top with another shell to create a sandwich
Optionally, drizzle chocolate ganache over the macarons and sprinkle crushed peanuts on top
Dust with cocoa powder if desired
Allow the macarons to rest in the fridge for a few hours or overnight to mature and develop their flavors
